A decade after opening eight-time Michelin Bib Gourmand award winner A Noodle Story, owners Gwern Khoo and Ben Tham are hatching up another express dining concept that goes by the name of White Bird Scramble. Located in the air-conditioned hallways of Frasers Tower, the eatery presents hearty French-style bentos that cater to busy professionals working in the CBD.

The DIY bentos all follow the typical grain bowl format (from $13) where diners can choose a carb base, a main protein, signature scrambled eggs with toast, a handful of sides and a choice of dressing. But in an effort to stand out among the competition, Khoo and his team insist on making the scrambled eggs upon order so they are fresh and fluffy. They even come with a French butter pipette for added decadence.

Our favourite picks in the main protein section are the oven-roasted cajun chicken thigh with burnt lemon and the chunky crab meat and prawn. The former is well-seasoned and succulent while the latter eats light and refreshing. Khoo also offers his signature option of tender sous-vide chicken breast with hints of thyme – a clean eating option but equally flavourful in the taste department.

There are over ten nutritious sides to choose from. Think crisp French beans with shiitake mushroom, garlic thyme roasted baby potatoes, shredded “pasta” zucchini, roasted broccoli with almonds, and much more. Safe to say that this is one lunch spot that isn’t yolking around.
